Baroque Chef and Nutritionist Nathan White will take you through the basics of classical French cuisine and dispel the myths that French food is unhealthy. Spend a day in our kitchen, learning the recipes, cooking methods and surprising nutritional aspects with hands on experience:
- Create a 4 course menu: Amuse, Canape, Entree and Main.
- Manage mis en place (spend more time at the table and less over a hot stove).
- Bistro techniques & tips.
- Lunch (as prepared by you!).
- Macarons and a coffee to finish.
All recipes, equipment and ingredients will be provided. We will also provide you with a Baroque apron.

For centuries, duck has been a core ingredient in the French diet. Learn how to break down and portion a whole duck and use the animal in a range of cooking techniques.

Create a 4 course meal from a whole petuna ocean trout, learning the nutritional aspects to this wonderfully versatile fish.

Learn the secrets behind your favourite recipes from Baroque Bistro's menu.

THE ORIGINAL MACARON MASTERCLASS WITH MASTER PATISSIER JEAN MICHEL RAYNAUD.
When: Every Sunday (except Public Holiday weekends) 9am to 3pm.
How Much: $220 per person.
Max Class: 8 pax.
Spend a day in our patisserie kitchen, learning the recipes, tips and techniques from the creator of Baroque?s Macarons, Jean Michel Raynaud. You'll learn the recipes, cooking methods and processes involved in making two flavours through chef demonstrations and hands-on experience.
The day will be split:
- Morning: creating fillings and ganache.
- Lunch: Light refreshments while your fillings set
- After lunch: Making the shells, piping and finally, the assembling of (a lot of) macarons!
At the end of the day, you'll walk away with a certificate of completion, an apron and a box of your very own hand-made macarons to show (but not share with!) family and friends. We will also be selling Macaron starter packs on the day for $30 so that you can recreate them at home.
